Banana Quinoa Muffins

  • 1/2 cup quinoa flour

  • ½ cup quinoa flakes

  • ¼ cup oat or garbanzo flour

  • 1 Tbsp maple syrup, molasses or coconut nectar

  • 2 tsp. baking powder

  • 1 tsp baking soda

  • ½ teas salt

  • 2 big or 3 medium/small, very ripe bananas

  • 2 eggs

Optional: raisins, cranberries, coconut flakes, chocolate chips, ground walnuts

Yields 1 dozen medium-sized muffins


Set oven to 400℉ degrees. Mix flour, flakes, and other dry ingredients in a small bowl or 2 cup measuring Pyrex measuring cup. In a separate bowl, mash or process the bananas and add eggs and maple syrup or chosen sweetener. Blend in the flour mixture. Pour into muffin tin or bread pan. Bake for 18-20 minutes. This recipe can be made as a loaf. Bake for 30 minutes or longer depending on the size of the pan.
