These gooey, delicious brownies are gluten free, dairy free and can even be made sugar free and still be yummy! The photo makes them look celestial because they are.
1 ½ cup steamed, peeled and cut-up, sweet potato, mashed
½ cup organic almond butter
½ cup coconut sugar or 10 drops of monk fruit extract (to taste)
1 Tbsp coconut oil
¼ cup cacao powder or non-alkalized cocoa powder *
¼ cup almond flour
1 teas vanilla extract
¼ teas baking powder
¼ teas baking soda
½ teas salt
½ cup chopped walnuts or pecans
Avocado or coconut oil for greasing the pan.
Combine all the ingredients in a medium-sized, mixing bowl, until smooth.
Grease an 8”x 8” baking pan or Pyrex dish.
Pour the batter into the pan and bake at 350°F.
If you're willing, allow them to cook before serving.
*You can substitute carob powder for the cacao powder.
