2 cups of organic walnuts, shelled
2 scallions cleaned and diced
½ red pepper diced
¼-1/2 cup parsley, basil or cilantro leaves
1 Tbsp coconut aminos
Juice of ½ a lemon or lime
Combine all ingredients in a food processor or high-speed blend. Process for 1-2 minutes.
Serve with vegetables, crackers, etc. Wrap it in lettuce leaves.
