Looking for a Ghoulish way to serve healthy Halloween Treats?
How about this…Pumpkin with a Digestive Issue.
It’s disgusting enough to make everyone laugh and delicious (if you can stomach it yourself) to eat.
Just carve a face into your pumpkin. Make sure the mouth area is clean. Make your guacamole.
2 ripe avocadoes
2 scallions or ½ medium onion peeled and finely chopped
1 small bell pepper chopped into ¼” pieces
1 juice of 1 fresh lime
Salt and pepper to taste
Handful of fresh, chopped cilantro (basil or parsley are good alternatives)
Cut the avocados in half and scoop out the yellow, green flesh and mash it in mixing bowl. Add in all the other ingredients and mix well. Keeping one of the avocado pits in with the guacamole will keep it from turning brown quickly.
Place your carved pumpkin on a large, clean plate. Spoon the guacamole in front of the pumpkin’s mouth. Put organic chips and cut-up vegetables, (carrots, celery, peppers, jicama, radishes) around the pumpkin and you have a ghoulish-looking centerpiece that doubles as a great snack.
