Revised Pancake Recipe

Ingredients:

  • 2/3 cup garbanzo bean flour

  • 1 teas. ground cinnamon

  • 1/2 teas. baking powder

  • 1/2 teas. salt

  • 1/2 cups whole organic milk or plant-based milk such as hemp, coconut or macadamia (Milkadamia)

  • 1 happy egg, beaten

  • 1 teas. vanilla extract

  • 1 Tbsp. organic butter, ghee, coconut oil or avocado oil for frying.

Makes approximately 6, 3" pancakes - 2 servings.


Directions:

Combine the dry ingredients in a bowl. Combine the wet ingredients in a separate bowl. Combine them and mix until smooth. In non-Teflon, frying pan, melt organic butter, ghee, and coconut oil or avocado oil. Pour ¼ cup of batter into heated pan and flip as needed. Repeat to make a whole stack.

Consider cooking these in a cast iron skillet if you are in your childbearing years, suffering from anemia or following a vegan diet.

Serve with maple syrup, or try them with some nut butter or chopped nuts and maple syrup
